What is salsa macha?
Salsa macha is a traditional Mexican, oil based salsa made with dried chiles and other ingredients that can include garlic, nuts, seeds, and spices. Unlike fresh salsas made with tomatoes or tomatillos, salsa macha gets much of its distinctive flavor and texture from dried and toasted ingredients combined with oil.
Salsa macha is most closely associated with the state of Veracruz, particularly areas around Orizaba and the mountainous regions of the state. Its roots are connected to longstanding Indigenous traditions of preparing and grinding dried chiles and seeds. Over generations, salsa macha evolved into the rich, oil based condiment enjoyed throughout Mexico today, with different regions, families, and producers creating their own versions.
The tradition eventually spread beyond Veracruz and became part of the food culture of other regions of Mexico, including Puebla and Oaxaca. That's part of what makes salsa macha special, there isn't just one recipe. Different versions can be spicy, smoky, nutty, slightly sweet, or extra crunchy depending on the ingredients used.
The Jenny Food's salsa macha we carry at BBWB Co. is imported from Puebla, Mexico, bringing Mexican made flavor directly to our customers.
Our varieties include No Tan Macha, our least spicy option; Cranberry Salsa Macha, which balances chile heat with a touch of sweetness; and Extra Hot Salsa Macha for those who want more heat.
Salsa macha is incredibly versatile. Try it on tacos, grilled meats, seafood, vegetables, rice, pizza, sandwiches, or even unexpected combinations like vanilla ice cream. Start with a small spoonful and make it your own.
How spicy are your salsa macha varieties?
Our salsa macha varieties have different heat levels, so there is an option for different preferences.
No Tan Macha is our least spicy option and a great place to start if you prefer a milder flavor.
Cranberry Salsa Macha combines heat with a touch of sweetness from cranberry for a sweet and spicy balance.
Extra Hot Salsa Macha is for those looking for the most heat.
Everyone experiences spice differently, so we recommend starting with a small amount and adding more to taste.
What is mole negro?
Mole negro is one of the most celebrated traditional sauces of Oaxaca, Mexico, a region famous for its rich and diverse culinary traditions. Oaxaca is often associated with several distinct varieties of mole, with mole negro being one of the best known.
Mole has deep roots in Mexican cooking, shaped over generations by Indigenous ingredients and techniques alongside ingredients introduced after Spanish colonization. Rather than having a single recipe or origin story, mole developed through regional and family traditions, with recipes often passed down and adapted over time.
What makes mole negro distinctive is its dark color and remarkably complex flavor. Traditional versions can bring together dried chiles, spices, seeds or nuts, fruit, and other ingredients. Some recipes also incorporate chocolate, which contributes depth and richness rather than simply making the sauce sweet. The ingredients are toasted, prepared, and blended to create layers of savory, smoky, slightly sweet, earthy, and spiced flavors.
In Oaxaca, mole is more than an everyday sauce. It has long been associated with celebrations and important gatherings, including weddings, holidays, religious festivities, and family occasions. Preparing mole from scratch can be a lengthy process, and recipes can vary considerably from one family or community to another.
The Mole Negro we carry at BBWB Co. is imported from Oaxaca, Mexico, bringing an authentic Oaxacan made product to our customers while making it easier to enjoy this traditional dish at home.
Mole negro is traditionally served with chicken or turkey and accompanied by rice and warm tortillas. You can also experiment with it as a sauce for enchiladas, vegetables, meats, tamales, or other dishes.
However you serve it, a little mole negro can bring generations of Oaxacan culinary tradition to the table.
